Did you earth them up whilst they were growing? There isn't anything 'to do' just let them grow.

The damp spring has made the potatoes grow particularly well this year, but four feet is very high even allowing for this. All you can do is earth the plants up as much as possible, as potatoes are swollen stems, not roots, and more will form if you can do this.
