what will happen if I pinch the growing tip of a two foot long sunflower. Will it still flower?

Agree with SBG if you were going to pinch out the growing tip needed doing earlier.

probably it will produce side shoots and you will get several smaller flowers. if you haven't done it yet I wouldn't.
