Hmm, that's a tough one, most leaves start out red or pink and turn green as they age. Only thing I can think of is Pittosporum tenuifolium 'purpureum' and they turn dark purple, not pink. Unless you're thinking of pink in the autumn, just before they fall, and even then, pink?
