Have you tried looking on google images? Anyway, which type, the Globe Artichoke which is a type of thistle or the Jerusalem Artichoke which is a Sunflower?

For Globe Atrichokes,the leaves are soft, no pointy ends. They have a whiteish, dusty look, and are long (over a foot long). The center stem will grow to a single flower, and then side shoots will appear just below that. Mine are already about 2" across and I'm getting hungry.
