Try growing it in late summer/early fall.

This is an interesting question, and useful because I've planted a few pak choi and noticed the same thing. For now all we can do is keep pinching, and eat the rest quickly?!

I found the suggestion of a late planting in the Stokes catalog (a US/Canadian company). They also mentioned that letting the seedlings get too old before planting outside can cause bolting.
