Both my tall cordiline plants have been killed by frost. Do I attempt to cut them down or is there any other option? Both have new growth at their bases.

cut the main stem down to the base, let the growth there take over - only trouble is, you'll find its a bushy looking clump rather than something on the end of a long stem. You could reduce the new growth down to one plantlet and let that grow on and form a stem.
