Do you mean 'earth up'? Otherwise unearth would simply mean dig up! Earthing up is to draw earth around the plants regularly so that the tubers or potatoes (which are swollen stems) don't turn green in the light and become poisonous. You can use straw or a thick mulch of any organic material instead to cover the base of the plants.
