What is this?!

Can anyone help please? This plant appears to be taking over in our garden. I have tried digging it out but it snaps before I hit this roots and it is incredibly invasive by the looks of it as it is spreading very quickly and has invaded the adjoining path, coming up between the slabs.
The next question of course is how on earth do I get rid of it ?
