Mine are too, have a recipe for a really yummy courgette chocolate cake, made it last year delicious :-)

I went to our village country market yesterday and one of the ladies had made cakes with courgette chocolate and nuts. Mmm it was lovely, also Beetroot and chocolate cake, and Lavender shortbread. Very nice. I usually make Courgette soup as well. Ooh lovely.

Oooh not tried soup Cinderella, bet thats nice, anything to use them up,lol, never fails to amaze me how they turn into marrows overnight,lol.
One way to get my eldest to eat something green, made the cake last year and never did tell her it had courgettes in,lol, you'd think by 20 she'd be eating some veg wouldn't you, younger one completely opposite loves all veg and salad stuff.
Heard of the beetroot chocolate cake never tried it though, is it nice?

The beetroot chocolate cake was nice, but didnt get the recipe, must try it. Courgette soup - briefly - 3 courgettes, 1 potato, 1 onion, saute in pan, add grated nutmeg, leave to sweat, then add stock & cook till soft. Blitz. Serve with cream optional, and grated cheese. Delicious. Have a go.
