The leaves and young shoots can be eaten raw or cooked, they have a mild pleasant flavour and are highly nutritious. They can be added in quantity to salads, making an excellent lettuce substitute.
The immature seeds can also be eaten raw or cooked, having a pleasant nutty flavour, they make a good nibble, but are too small for most people to want to collect in any quantity.
Boiling the roots produces an egg-white substitute for making meringue. Bring the roots to a boil in water and then simmer until the water becomes quite thick. This liquid can then be whisked in much the same way as egg whites.
