Today's Lunch Prep! Golden Beetroot, yellow Courgettes, Peas and tiny Onions

Sweated off the veg in a little oil. Then boiled up some Giant Cous-Cous in water with a veg. stock cube added (this will mean you don't need to add any salt). Drain the Cous-cous, add all the veg and serve sprinkled with some Manchego or other hard cheese. Delish!

Thank you. ‘They’ say we should eat a rainbow every day. Well, I’m doing well today. I just had Strawberries, Raspberries and Juneberries for my dinner! Reckon I’ve had all the colours today!

Thank you Amy, I was so proud of myself. But pride ...as you know...comes before a fall. And I ended up eating far too much and feeling pretty uncomfortable! :) typical!
