Yes, they need to be pruned from the early stages, not until after leaf fall, shape the tree carefully so that it will grow into a nice shape later.

What about the non standard ones?

Follow the same instructions. Be harder on the thicker fonds and cut less off the thinner ones.
To get a better shape bend the larger fonds (tie them down with a weight or peg) out level with the smaller ones, then the hormone auxin will reach all the tips at the same time.
