Malteser Cheesecake

Hi all following Karen’s Malteser blog, I have been asked to post a my colleagues recipe for a malteseser cheesecake. I’ve never tried it myself but have it on good authority its yummy. If anyone attempts it please let us know how you get on (and if its really sickly – sounds it from the recipe lol.

100g digestive biscuits
200g maltesers
125g melted butter

cheesecake mix:
800g cream cheese
200ml sour cream
200g icing sugar
couple drops of vanilla essence
100ml double cream
150g maltesers roughly crushed
maltesers to decorate

1. Brush 8" tin with melted butter
2. Whizz up biscuits and maltesers until fine breadcrumbs. Add the melted butter and mix together.
3. Put the mix into the tin an firm. Chill for 30minutes.
4. Beat together cream cheese, sour cream, icing sugar and vanilla essence until combined.
5. In a second bowl whisk the double cream until it forms soft peaks
6. Gently fold the double cream in with the other ingredients a bit at a time.
7. Fold the crushed maltesers in with the other ingredients.
8. Pour the mix over the biscuit base in the tin and tap twice to remove air bubbles.
9. Chill for 2 hours, decorate with maltesers then serve.

Hope it goes down well Magnadoodle. As I recall my colleague made it for one of our McMillan Coffee mornings and it dissapeared rather quickly.

Ohhh not a good combination really then. Probably not the best idea to eat a malteser cheesecake then really. You have my deepest sympathies on that one.
