hi all,my partner brought home a big box full of damson and we'd like to make damsonchutney..can anyone tell me a simple reciepe that wont make pounds and pounds cos we want to make some damson gin too..thank u.

This is a recipe for plum chutney which I think would do well. It comes from the very first series of "Farmhouse Kitchen" in 1971.

2lbs plums/damsons; 1lb carrots; 3 cloves garlic (optional) ; 1 pint vinegar; 1lb soft brown sugar;
half teaspoon cayenne pepper; 2 ozs salt; half oz ground ginger; 1lb cooking dates, chopped.

(This is an old recipe and you might want to cut down on the salt!)

Remove stones from fruit and chop. Crack a few of the stones and remove the kernels. Clean and grate the carrots, peel and finely chop or grate the garlic. Put fruit, kernels, carrots, garlic and vinegar in pan and simmer until soft (about 50 mins) Add sugar, cayenne pepper, salt, ginger and chopped dates and boil for about 30 mins or until thick. Pour into hot, sterilized jars and seal. (Yields 3-4 lbs)

I have made this with plums and it is very good. If you don't want to use garlic, you could use a finely chopped shallot, or some onion.

In the right hand corner is a searchbox that takes you to goypedia, ....I just put damzon gin in there and lots of recipes came up....plum gin is good too at christmas.....
