Have purchased two apple trees, put them in large pots but they are going up and up. If I nip out the growing tips will this encourage them it into more of a bush shape tree????

Did you buy trees on a dwarfing rooting stock as these are OK for pot growing and won't get too big. Otherwise they will make big trees and are better in the ground.

In principle, yes, and a lot of formative pruning is done at this time of year to encourage the shape of the tree or bush. Any major pruning should be done in the dormant period in winter however.
