Hi Everyone.
Have just been looking for Strawberry Jam recipe on site (A-Z), but can't seem to find one.
Does anyone know what title it comes under. I've found pictures, but no recipe.

Hi. Linda, maybe the person who produced the jam has left, try writing a blog....I bet Sticki would know, I,ve mrs beetons.......but it never sets unless I put gooseberries in.....

I've searched google but their recipes are more or less the same as I'm already doing.
I have an old preserves and chutney book, but believe it or not, the only recipes for strawberry jam are Strawberry and Orange Conserve or Strawberry and Peach Jam.
I've made it now, but again I'm having trouble trying to get it to set.
Another thing I've noticed is, the fruit seems to rise to the top of the jar, so the bottom of the jar looks like I've made jelly rather than jam.???
My cranberry, redcurrant etc have been fine. Seems to be just the strawberry I'm having problems with.
Having said that, lol. last year, I made my usual redcurrant juice, and it set in the bottle. I had a heck of a job trying to get it out. lol.
Hubby told me to 'bin it' when he saw me struggling, but apart from not wanting to waste it, I liked the bottle I had it in. hahaha lol.
My Mum always said 'you learn by mistakes' or 'call it trial and error, this is how we learn' :o)

Strawberries have very low pectin, you can buy it.....called certo...i think, or you can ad other fruit like the gooseberries I mentioned, or how about the redcurrants...,thats why the fruit is floating, you could add gelatine and call it strawberry jelly......;0)

I've not used it before, as I've never thought I needed it. Obviously I do. lol. for my strawberries.:o)

You can also use lemon juice as this is high in pectin.

You can buy sugar which has the pectin already added too. I use lemon juice as moon_grower stated. It always works for me.
