what sort of evergreen tree can I buy that is 6' to start with but grows no more than 10' , not a fir tree variety.

On plant ?

Evergreen, not coniferous, max 10 feet, none. Deciduous, yes, evergreen no.
You could buy Euonymus aureus and keep it clipped to the shape and height you want, but I wouldn't recommend buying a 6 foot one to start with - younger plants settle in and grow better than mature specimens.

Thanks for that but as I'm nearly 80 I don't want to hang around too long waiting .

Good point - but planting means, to some extent, playing the long game!
