Does anyone have a recipe for unripe green figs? We have masses this year!

I know there are fig jam recipes but, living where we do figs don't survive!

The main problem with unripe figs is that, unlike other fruits, they contain latex! Still, there are recipes online for jams and preserves--none of which I have tried.
