where do i cut the stem once all the flowers fallen of

Could you please say which plant you are asking about?
I am taking a wild guess at a moth orchid!!! If I'm right, then cut the stem just above the bottom scale on the old stem. Usually, a new stem will grow either from the scale (node) or from between the leaves.
