butternut squash

Hi everyone! The last of my butternut squash,I've picked but are not ripe and not fully grown in size, pale yellow not pale orange.Are they o.k. to eat like this or not? Your advice much appreciated,Thanks. Masie

you might try putting in brown paper bag and closing to see if it will ripen (like tomatoes). good luck!
