my hubby does NOT want salad stuff grown in the greenhouse during the winter months apart from lettuce what could i grow?
I have a border of 15" x 6ft.

How about peas, green onions, Granex onions, radishes, turnips, leeks, carrots, chard, mustard, collards, spinach, swedes, cauliflower, broccoli, and/or bok choy?
Those are all things that we grow in the winter here in Phoenix, and also in Tucson, which should do fine in an unheated greenhouse in the UK, and don't have to go into a salad.
