We have 2 Gum trees that have just been put in the ground, should we be doing anythng with the branches at ground level and just above to help the trees grow better?

If by gum trees you mean Eucalyptus gunii, you don't need to do anything at all, they grow 8 feet every season and will pretty soon be up to 50 feet.
