What should i do with my lupins once they have finished flowering? The flowers seem to have turned into pods? Do I just leave them to die down naturally or do I cut them down etc?

Cut the stems back to below the pods....you might get a few more flowers appearing. If none do after a couple of weeks, then cut the stem to the ground.

As Spritz says if you cut the flowered spikes off, you would usually get a 2nd flowering - be patient they will bush out and produce new growth.
