I am looking for mature wedding cake tree but every one I look at has a warped stem or trunk which looks awful, is this normal for such tree.

From your description, Rossie, I suspect that the trees you are seeing have all been grafted, and badly at that!. All I can suggest is that you keep looking until you find a nice one.
