what is the centre of the cynara cardunculus called?

On plant Cynara cardunculus



The edible part (the expanded top of the stem) is called the heart. The fuzzy stuff on top of the heart (the actual flowers) is called the choke, and is not normally edible. This was answered many times before. I hope it's not the same person asking again and again!
