wood chips vs. bark mulch

I have yards of wood chips (mixed fir, hemlock and red cedar) that I've composted for 3 years. I'd like to use it as decorative mulch around shrubbery. I've heard of using fir bark mulch, but what about wood chips? Will it steal too much nitrogen, or add to much adicidity? Can I ammend with organic supplements to compensate?

We have been putting mixed shreddings from the various woody plants in our garden on the soil as mulch for ages. If you are worried about nitrogen depletion then scatter a handful of bone meal per square metre before applying. Or let the chippings partly decompose before using.
