Green Rhubarb

My Rhubarb stems just aren't turning red. I don't know why. Can I eat them even though they aren't the conventional colour?

Not all varieties of rhubarb go red. Also isn't it the middle of winter with you?

Moongrower's right, not all stems are red - different varieties have different colour stems, varying from pale pink, thinnish stems, through to deep red, or mostly green and usually quite chunky stems. And yes, you can eat them!
