how will I know when my container grown potatoes are ready to harvest?

If they are 'earlies', wait until they have flowered and the foliage begins to wither and die down. After this the tubers won't get any bigger anyway.
If they are 'lates', I would leave them until much later while the foliage is green and healthy. With lates the tubers tend to bulk up much later in the summer.
