Not been on GOY for about 4-5days, just finished doing 16 of these, well last 2in oven now.
RECIPE FOR CAKE
Its called 1LB CAKE

1LB SR flour
1LB mixed fruit
1/2LB sugar
1/2LB marg
1tsp mixed spice
2tbl spoones of black treackle
4 eggs
milk.
mix flour marg together, add sugar, fruit and mixed spice mix altogether, add eggs and milk mix all well together, line 2 1LB cake tins with kichen foil, split mix into both tins and cook in oven on gas 3 for about 1 1/2 hrs stick needle in if comes out clean the cakes are done. you are better leaving them for about 2wks before you eat them, i've done them know for xmas.

Thanks Carole I will be making this , I like to make some things early before xmas .. not so rushed at the last minute then ....

I have one of those new loaf tin shapes made out of that new fangled rubber stuff , do you think I still need to line it with tinfoil ?

It looks lovely Carol. I always helped my mother to make Christmas cakes and puddings. I could do it blind folded lol. She made so many and gave most of them away ( or rather I made them and she gave them away lol )

None this year :o((

Oh and I hated lining the tins - I used greaseproof paper, and it had to be cut in a certain way lol - my mam was very particular. Her father and grandfather were bakers and she followed suit :o)

I'm not a great one for food.

This recipe was given to me by a 75yr old lady and that was about 43yrs ago. So it is what you call an old fashion recipe. My sons like it with custard aswell as on its own, and if any left when they go back to work they but butter on it. Just taken last 2 cakes out of oven.

Yes Hywel, I was just thinking that myself. It must really smell 'homely' round at yours tonight Clarice. It's one of those smells that takes you back to your childhood isn't it. (I only have to smell a jar of mixed spice and I'm back in my pram, being pushed by my Grandad, around the wharfs and warehouses near Tower Bridge).

You are right Janey it does'nt last 2wks here either, once they start to eat it, but i do tell them to leave it a couple weeks and although its so nice after a couple of weeks i think it taste even better.....

I might have a go at doing one of of these I never did any cooking at all until recently. Ready prepared meals for the micro wave and the occasional Fish and Chips . I can boil an egg though.
