There are about 350 different species of thyme which has been thought to impart courage since roman times but is now known more as a culinary herb.
Thyme is happy in a sunny place even in really bad soil and once on its way, doesn’t like much water either! Flowers are white, purple or pink and very attractive to bees too.
Thymus vulgaris or common thyme comes from the western Mediterranean and southern Italy and is used in cooking to add flavour. It forms part of the French ‘bouquet garni’ along with marjoram, parsley and bay leaves.
