Recipe for Blueberry Muffins

I thought this was a more appropriate space for the recipe.
For those of you using metric, 1 cup = 250 ml

Blueberry Muffins
Makes 12 425°F oven

1 3/4 cups flour
1/4 cup oat/wheat bran or wheatgerm
2 tspns baking powder
1/2 tspn salt
1/2 cup sugar
2 cups high bush blueberries (the large ones work best, frozen)
2 eggs
1/2 cup milk
4 tblspns (2 oz) butter, melted

Prepare (butter) a 12-muffin baking pan.
Warm the milk slightly in the microwave, melt the butter in it and add the eggs; whisk together. Mix the dry ingredients in a bowl and stir in the blueberries (frozen ones work well).
Fold in the milk and egg mixture just until combined – do not overwork. Spoon into the muffin pan.
Bake for 15 minutes, and leave to cool in the pan for 5 minutes before removing as the blueberries will be hot and will stick to the pan.
Serve warm for breakfast.

If you use the small, low-bush variety, even from frozen, they defrost so quickly they turn the muffins blue, no matter how gently you fold them in. Still taste great, but they don’t look as pretty.

TIP: I find the quicker I can mix everything together (even if it’s not completely incorporated) and the less I stir the mixture, the lighter the muffins turn out. I think that’s the secret.I can have these on the table easily within 25 minutes.

The trick is to eat one and freeze the rest. Once defrosted, they warm easily in the Microwave if you have one. I used to have friends in Lytham-St-Annes. Glad you're enjoying the birds that visit your garden. They bring it to life, especially in the winter, don't they?

It is really easy and fast. I added a tip to the recipe, really important not to overwork the mixture. 2 or 3 turns with a large spoon or spatula is enough.

You have to be very strict with yourself, I know, one is never enough for me either... I tell myself the bran and the fruit are good for me...

I have a blueberry bush - very small as I only bought it last year, but it produced 15 blueberries which I carefully put into some muffin mixture put aside for that very purpose, so we've each had a blueberry muffin from our own blueberry bush - lovely! I'm sure the sole reason for the existence of blueberries is to go into muffins!

A handful of fresh ones tossed into a morning bowl of granola and yogurt goes down well. But I think cooking brings out the flavour. I boil them with sugar, 1 tspn of cornflour/cornstarch and a little water to make a delicious sauce for waffles, ice cream of sponge cake.
