This is so easy to make.Scone dough base,with fillings of your choice.I usually do ham and mushroom,or any leftovers that need using up,peppers,chorizo,etc.


You will need a greased baking sheet,approx 13"x 10",as this makes enough for 4 people,or cuts into 20 buffet style portions.

Ingredients….Base.
12oz SR flour.
3oz hard margarine.,pinch of salt.
6 fl oz milk.(approx)..enough to make a fairly soft dough.

Toppings….1 medium onion,chopped finely.
Large tin of chopped tomato’s with herbs…I use one with Oregano and Basil,or you can use ordinary,and add your own herbs.
Mushrooms ,sliced ,and quartered if large.
Cooked ham,about 3 medium slices…cut into small pieces.
4/6 oz of medium or strong Cheddar cheese,grated.
Preheat oven 170 fan /190C /375F orGas 5
Method…
Put tomato’s in a frying pan and add chopped onion.Simmer till juice is reduced and onion cooked…about 20 mins,and leave to cool,it doesn’t need to be cold.
While waiting,either prepare toppings,or make dough.
roll out to fit baking sheet,don’t worry if its not a perfect fit.When I think its almost big enough,I lift it on the baking sheet,and roll it again.Any overhanging bits,you can cut off,and use it to patch the missing bits at the corners.! Nobody will ever know..perfect,I am not.!
Now add your tomato mixture,to within half an inch around the edges,to stop filling running over.Add toppings,and lastly cheese.
Cook in preheated oven approx 35/40mins.until cheese melted and golden.

Sometimes I have used bacon,if it needed using up.just cook it gently to partly soften it,but don’t brown it.I don’t use expensive cooked ham either,sometimes I buy the ham ends they sell cheaper,after slicing.I have
tried to make this easy to follow,but if anyone needs clarification,please get in touch.Hope you enjoy it,all my lot do,and children especially.It was always a request at Alison’s birthday parties.It also can be made in advance,and keeps for ages in the Freezer.I cut it into portion size beforehand….as it wouldnt fit .. Lol.and put clingfilm in between layers,and one on the top layer too,then its easy to take out what you want…if you don’t eat it all at once,that is…:o)) .

Tomorrow lunchtime,Lou,family coming and Anthony's parents,and you would be more than welcome..get on ya bike,girl .Lol...Have also done a Roast chicken,stuffing and apple sauce,for sarnies,to be garnished with a side salad...ooh,posh! Cheesecakes to follow...Mandarin,or Cherry...still coming?

I hate the skimpy toppings on some of them too,I like plenty on mine.

I only ever buy a certain brand, their restaurants do a Sloppy Giuseppe pizza, now you know who I'm talking about ! Goota go now, forgot to put the gammon remains away and you- know-who could be eating them ... lol !

Thanks Bloomer for your excellent recipe. You know I was wondering how you got the crust so square on your cookie sheet....now I know....lol Here was I thinking you were an expert pastry roller and a perfectionist...so happy to find you are not like that at all...I would end up doing a patch and cut job too :)

I'll keep this recipe handy and spoil the grandkids one day soon. I'm sure they'd like it.

LOL, Sandra, we left home at 08.15, arrived there at 09.05, wandered around looking at lots of things, ate our food from home whilst watching dogs in the arena and left at 13.00, just as the rain started yet again ! It's now 21.35 and tipping down again, grrrr ! Not long to go until you're 70 plus, ha ha ha !
