What to do with those green peppers

Today I picked my green peppers ,they are never going to get red are they ?
Now what to do with them , well I sliced them up thinly with onions from the garden also a few of the RED tomatos and fried them very gently with some garden herbs .
I have put portions in containers to freeze , it will be perfect for winter recipes pizza toppings etc.
It will be a reminder of the Great British Summer that we never had .

Well done for having some peppers Amy. Mine failed miserably like everything else I've tried this year.
It will be good to remember to do this for the future .

may heve to do the same , got about 6 large peppers but still green and not a huge amount of sun around to tempt them into a different colour.
maybe a huge chilli-con-carne!!!..............steve

Hi Amy - most of mine turned/are turning red. I blanched a load and froze them in blocks. If I do stir-frys in the winter, I just drop the frozen block in. It melts straight away and they're just fine. Another idea for you for next year perhaps :-)
